PURPOSE:To prepare a separation-type dressing having sharp and clear interface and hardly forming a turbid layer at the interface of the oil phase and the water phase when left at rest after shaking, by adding meat extract to the raw material of the water phase or by adding lecithin to the raw material of the oil phase. CONSTITUTION:In the preparation of a separation-type dressing by conventional process, the raw material of the water-phase is added with 0.05-1.0%, preferably 0.1-0.7% meat extract based on the raw material, or the raw material of the oil-phase is added with 0.003-0.1%, preferably 0.005-0.07% lecithin based on the raw material. |
