A device for boning pieces of meat such as shoulder or rib pieces, legs of poultry and the like, comprising a frame (1), a cutting element (2) arranged therein and having a continuous cutting edge (4) essentially matching the bone form in the piece of meat, a counter-element (3) arranged in said frame and driving means (2 sec ) for moving the cutting element and the counter-element away from and towards one another, whereas one or both of the elements (2, 3) are provided with a recess (5), filled up with one or more layers of elastic material (57, 58), for example rubber, which will gradually nestle around the bone portion whilst pressing the piece of meat, said layers may furthermore include one or more additional supporting-(61) and cutting-(72) members performing cuts across sinews or skins at predetermined places. Said device may be further provided with gripping means (7) for manipulating the piece of meat and centering means (81) for having the bone in the uncut piece of meat in the correct position before the cutting- and counter-elements are pressed upon eachother. |
