PURPOSE:Salt, sugar and vegetable oil are added to boiled and squeezed fish meat and soaked in it and the fish meat is separated from bones with a separator without cutting or pulverizing of meat fibers, then combined again with cooked bone powder to produce the titled food product rich in nutrients. CONSTITUTION:Dressed fish bodies are boiled and squeezed, then combined with 1% salt, then 25% sugar, and they are stirred under heating to get salt and sugar to soak into the meat. Further, 0.3% vegetable oil is added and crushing by agitation under heating is effected for 30-60min to fibrilize the fish meat tissues to separate into meat parts and small bone pieces. The product is passed through a mesh of 1cm size which is vibrating horizontally, then falls down to the strip-shaped mesh plate where the bone pieces fall downward 5 and the meat fibers are sent to rooms 6-8 by air blowing. Back bones and the above bone pieces are put together, a small amount of water is added, 1% gelatin solution is added, while they are boiled to be soaked, then they are concentrated to dryness. Further, 0.3% vegetable oil is added, they are stirred under heating to keep its water content 10-15% and cut into pieces with grooved rollers. The resultant bone product is combined with the above fish meat fibers, seasoned, colored and flavored to give the titled food product. |
