摘要 PURPOSE:To prepare a low calorific and highly nutrious baked Japanese cake rich in animal proteins, etc., by using potato, adzuki beans and milk as raw materials. CONSTITUTION:Wheat flour used as a main raw material is dissolved in water and mixed with salt to obtain a coating material. Peeled potatoes are boiled in water, drained, mashed, kneaded thoroughly to ensure a smooth mixture, added with boiled and sugared adzuki beans, and mixed thoroughly. Separately, sugar, milk, salt and margarine are put into a pan, and heated for a short time to obtain a molten mixture. The mixture is added to the bean paste obtained from potato and boiled adzuki, and kneaded over a slow fire. The produced paste is transferred to a proper vessel and divided into parts having equal thickness. The part is placed on a flat plate dusted with wheat flour, shaped to a square shape by hand, and cut to a definite size with a knife. An oiled baking plate is heated on a medium fire, and the whole circumference of the cut paste is coated with the coating material prepared above and baked on the baking plate. The baked cake is wrapped with a leaf to obtain a Japanese-style cake having excellent taste and flavor.
