摘要 51-Nucleotides and/or nucleosides are produced by bringing a ribonucleic acid and/or oligoribonucleotide and/or a 21-desoxy compound thereof into contact at a pH between 4 and 10 with living cells of, or an enzyme system produced by, a microorganism belonging to the order Sphaeriales, said enzyme system containing or living cells producing phosphodiesterase, with or without phosphomonoesterase and/or adenylic deaminase. Suitable microorganisms include those of genera Anixiella, Botryosphaeria, Chaetomidium, Glomerella, Neurospora, Ophiobolus, Ophiostoma, Sordaria and Tilachlidium. Phosphomonoesterase inhibitors may be present as may accelerators such as magnesium salts. Phosphomonoesterase may also be inactivated by heating for about 5 minutes at about 60 DEG C. and pH 4-7. The nucleotides may be isolated as salts, e.g. with Ba, Ca, K, NH4, amino acids, cyclohexylamine or brucine. The nucleotides may be used in seasonings (Group VI).ALSO:A seasoning comprises, together with an inert carrier, a 51-nucleotide which has been produced by bringing a ribonucleic acid and/or oligoribonucleotide and/or a 21-desoxy compound thereof into contact, at a pH between 4 and 10, with living cells of, or an enzyme system produced by, a micro-organism belonging to the order Sphaeriales, e.g. genera Anixiella, Botryosphaeria, Chaetomidium, Glomerella, Neurospora, Ophiobolus, Ophiostoma, Sordaria or Tilachlidium, said enzyme system containing, or the living cells producing, phosphodiesterase, with or without phosphomonoesterase and/or adenylic deaminase.
