The conversion of cellulose to mono- and di-saccharides is brought about by hydrolysing the cellulose with an enzyme preparation of a strain of bacteria from the genera Cellulomonas or Pseudomonas which is supplemented with a cellulase derived from either a fungus or an actinomycete. The fungal cellulase is one preferably obtained from fungi of the genera: Trichoderma, Penicillium, Aspargillus, Fusarium or Schlerotium, Trichodoma reesei being the preferred strain.
