PURPOSE:To prepare a lactase having extermely high titer, by cultivating a strain belonging to the genus Kluyveromyces, capable of producing lactase. CONSTITUTION:A strain, e.g., Kluyveromyces lactis 81R-10(FERM-P5710), belonging to the genus Kluyveromyces, having lactase producing ability which exhibits at least one of properties of catabolite repression resistance, properties of resistance to growth inhibition of lactase activity inhibitor, and properties of constitutive lactase formation, capable of producing lactase, is inoculated into a nutritive medium having a galactose content of <=1wt% and cultivated under aerobic conditons, to collect lactase from the mold. |
