PURPOSE:To prepare the titled potato which can be thawed with little syneresis and low tendency of becoming spongy, by heating a raw potato in a solution of dextrinalcohol to convert the starch to alpha-form, and freezing the product. CONSTITUTION:A raw potato is immersed in a solution containing 30-65%, pref. 45-55% of dextrinalcohol having a DE value of 5-20, pref. 7-15, and heated to boil the solution. The boiling of the solution is carried out for 10-20min to convert the starch of the potato to alpha-form. After heating, the potato is drained, allowed to cool, and frozen. |
