Soaked, stoned and homogenised date pulp is used in gum-like confectionery prepn. The process comprises enzyme-treatment, filtration, freeing from salt, discolouration and concn. The concentrate is mixed with liquefied polysaccharides and heated, solidified by cooling and worked into portions. In addn. to confectionery main prod. prepn., the process yields a filter-cake which can be mixed with ground pips and used as feedstuff for ruminants. |
