摘要 <p>A bakery oven has a baking chamber with flat, vertical walls. An air heater and a fan are installed on top of the oven to circulate hot air through the baking chamber. Two opposed walls of the chamber are perforated so that hot air can be blown through one and extracted through the other. To this end an air duct covers the exterior of each of the walls, one duct connected to the delivery outlet of the fan heater and the other to the suction inlet. These connections are periodically reversed so that air flow through the chamber changes direction. Whichever one of the ducts is connected to the delivery outlet is supplied with air only at the bottom of the duct. The other duct is connected to the suction inlet of the fan heater only at the top of duct. These conditions remain satisfied when airflow direction is reversed, so hot air always rises diagonally between the two walls.</p>
