<p>The disclosure describes a method for producing bread, which comprises kneading a dough together with (a) an L-ascorbic acid and (b) an additive selected from divalent carboxylic acids having the general formula (1) and salts thereof wherein, n is 0 or 1, X denotes a hydrogen atom, an amino group or a hydroxyl group, and each of Z and Z' is a hydrogen atom; or Z and X and/or Z' and Y represent in a combined form, an oxygen atom; cystine, methionine, alums and nicotinic acids allowing the thus kneaded dough to ferment, and then baking the thus fermented dough.</p> |
