PURPOSE:To prepare noodles having excellent preservability, by adding sorbic acid homogeneously to the noodles using a suspension composed of sorbic acid, a hydrophilic dispersing agent and water as effective components. CONSTITUTION:In the conventional process for the preparation of noodles, sorbic acid is added homogeneously to the noodles at a concentration of about 0.01-0.1%, using a suspension composed of (A) fine powder of sorbic acid having particle diameter of <= about 104mu, (B) a hydrophilic dispersing agent composed of one or more compounds selected from sugar fatty acid esters, sorbitan fatty acid esters, fatty acid lactates, lecithin, etc. pref. having an HLB of >= about 7, and (C) water, as effective components. For example, in the case of preparing fresh noodles, said suspension is added to the water for the preparation of pastry, and in the case of preparing boiled and steamed noodles, the boiled and steamed noodles are immersed in the diluted said suspension. |
