<p>Prodn. of fermented drinks (e.g. beer or wine) with a reduced alcohol content is carried out by dialysing a conventionally produced fermented drink at a differential pressure of 5 (pref. 1, esp. 0.1) bar. The drink is pref. dialysed against an alcohol-free drink of the same type, in which case the alcohol is removed from the dialysate (e.g. by adsorption, extraction, reverse osmosis and/or distn.) and the alcohol-free dialysate is recycled. In the case of CO2-contg. drinks, the pressure at which dialysis is carried out should be greater than the satn. pressure of the dissolved CO2, and the drink is pref. dialysed against a liq. contg. the same amt. of CO2 as the drink. Dialysis is more selective than reverse osmosis (cf. DT 2135938), so that alcohol can be removed without significantly altering the flavour of the drink.</p> |
