The product is subjected to an electromagnetic radiation wave which has a frequency in the vicinity of the molecular resonance frequency or of one of its harmonics in the frequency range of between 3000 and 15000 megahertz with an intensity higher than 1 milliwatt per cm<2>. Application to the acceleration of a fermentation, in particular to obtain vinegar, the purification of sewage or the production of methane from manure.
