PURPOSE:To prepare a nutrient and invigorating product having combined nourishing elements of a snapping turtle and honey in a short time, by keeping cut pieces of meat of snapping turtle weakly acidic, heating it at a specific temperature until oxidation finishes by autolysis, followed by adding honey and aging. CONSTITUTION:A snapping turtle is steamed at 80 deg.C, its skin and urinary bladder are removed. The head is cut, and flowing out blood is blended with honey. The residue is granulated into pieces with diameters of about 2-3mm. and put in a stainless container. Water is added to the contained product or not, about acid is addee to it to make pH about 5, and the meat pieces are introduced into an autolysis bath with a heating jacket. They are treated with stirring at an interval of ten degrees at 0 deg.C, 10 deg.C, 20 deg.C, 30 deg.C, 40 deg.C, and 50 deg.C for 30-60min respectively to make the meat liquid. Bones and the skin residue are removed, and about 2.2kg honey with Brics dextrose equivalent of 79 degrees are added to 300g of the liquid and blended to adjust dextrose equivalent not less than 70 degrees. The liquid is filtered, if necessary, and the purified liquid is bottled to give a product. |
