Examples are given using whey protein, casein, egg-white protein, and soya bean protein acylated with succinic and glutaric anhydrides. The oil phase may comprise an edible glyceride oil. The product may be an artificial cream, synthetic or filled milk; in one example an ice-cream mix is formulated. |
