摘要 A process and a plant installation for cooking food prods. in a steam chamber are claimed. Before steam is admitted to the chamber, the pressure inside the chamber is reduced to below that of atmos. Pref. the cooking process includes several repetitions of the cycle-vacuum/steam, vacuum/steam. The installation pref. comprises a vacuum-tight cooking chamber which can be connected to a steam generator and alternately, to a vacuum system. The vacuum system is pref. equipped with a vacuum pump and/or ejector(s) as well as a vacuum receiver vessel. The vacuum/steam cycle is pref. automatically controlled in accordance with a predetermined programme. The cooking chamber pref. contains a fan or blower which can accelerate evacuation of air by the vacuum system; it can also assist in the admission, distribution and extraction of steam. The vacuum treatment extracts water and air from the prods. which allows steam to penetrate to the core of the prods. Cooking is faster, and flavour and colour are better retained.
