<p>PURPOSE:To obtain a raw material with high alcohol content for ratafia without the multiplication of microorganism and without requiring the addition of an antiseptic, by submitting an alcohol-containing fruit juice having a specified range of a ratio of alcohol (vol.%) to sugar degree (g/100ml) to concentration throught refrigeration. CONSTITUTION:An alcohol is added to the fruit juice of tained by squeezing fruit, e.g., group, apple, so that the juice has a ratio of alcohol (vol.%) to sugar degree (g/100ml) of 0.4-2.4. The alcohol-containing fruit juice is cooled to approximately -20 deg.C and concentrated to much higher concentration than that of a conventional raw fruit juice. Namely, for example, raw graph juice can be concentrated to 2.7 times the conventional concentration. The concentrated fruit juice is diluted and fermented by a common fermentation to give ratafia, which exhibits the same quality as that obtained from raw fruit juice.</p> |
