PURPOSE:To provide facilitated and sanitary handling, by subjecting cotton- strained bean curd in an amount of one block in a state packaged in a container made of a water-permeable nonwoven fabric or paper to hydration treatment. CONSTITUTION:A liquid bean curd stock solution which is a mixture of soybean milk at a low concentration with a coagulant for cotton-strained bean curd in an amount of one block is respectively injected into separate coagulation containers, then heated and coagulated. The bean curd coagulated in the respective coagulation containers is separately crushed and sealed in separate containers 3 made of a nonwoven fabric or paper having water permeability and subjected to dehydration treatment to provide cotton-strained bean curd. Thereby large blocks of cotton-strained bean curd can be finished into a packaged cotton-strained bean curd each in size of one block without passing through a step of cutting the large blocks of the cotton-strained bean curd into many blocks of bean curd, i.e., directly touching the bean curd with the hand. |
