Polished rice is moistened by passing a humidified stream of gas through a bed of polished rice grains. The gas on the outlet side of the bed has a moisture content greater than that necessary to maintain the moisture content of the rice at the required level. The gas is prepd. in a conditioning plant which has a humidifier. The gas is ducted into the grain conditioning plant in which is located a moisture sensor. This is connected to a control unit which regulates the humidity of the gas. Rice grains tend to crack and distort if their moisture content is low when they are cooked. This adversely affects the flavour which is improved by this process.
