PURPOSE:To prepare high-quality ground fish meat while preventing the deterioration of meat, by collecting the meat from fishes in the presence of a solution of sugars and/or amino acids. CONSTITUTION:Meat is collected from fish bodies free from heads and the entrails, chops, or fillets in the presence of an aqueous solution containing about 0.1-20% of the total sugars, e.g. sorbitol, dextrin, sucrose and/or amino acids, e.g. sodium glutamate or glycine, or the solution adjusted to pH7.0-8.5 by an alkali salt, e.g. sodium carbonate or disodium hydrogen-phosphate. The collected meat is then bleached with a solution containing sugars and/or amino acids, or further an alkali salt. |
