Low-caloric and low-fat, slicable patties ar composed of a vegetable mixt. (instead of the usual fat) and lean meat. They have 74 cals./100g and a fat, content of 3.4%. A suitable mixt. may be made from 6000 kg mixed vegetable (cauliflower, kohlrabi, celery etc.), 8000 kg veal (muscle), 8000 kg beef (muscle), 10000 kg ice and 20g nitrite and 4g seasoning per kg. The compsn. is ground at =8 degrees C, packed into synth. casings and allowed to ferment at 72 degrees C. |
