PURPOSE:To prepare a low-salt pickled ''ume'' having unique taste and flavor, by using sugar, sweet ''sake'' and vinegar, and a considerably reduced amount of salt. CONSTITUTION:After removal of harsh taste, 1kg of ''ume'' fruits, and if necessary, a proper amount of ''ume'' flowers at the flowering time or ''ume'' leaves, are pickled in a medium composed of about 100g of salt, about 100g of sugar, about 400-500cc of vinegar, about 200cc of sweet ''sake'', and if necessary, a small amount of low calorific sweetener such as maltitol and xylitol. |
