PURPOSE:To prevent drying, to improve the softness and gloss, and to facilitate the loosening of noodles, by immersing the noodles in hot water having an oil surface layer, thereby applying the oil to the noodles and sterilizing the noodles with hot oil. CONSTITUTION:A lump of hard-boiled noodles is put into a metal basket 4 through a hopper 2. When the metal basket 4 is dipped into hot water 6, and passed through an oil fence 8, the rotary oil cock 14 of an oil feeder D is opened, and the predetermined amount of oil is added dropwise to the surface of the hot water in the metal basket 4. After several seconds, the basket 4 is pulled off from the hot water bath 6, and the oil spread over the surface of the water is attached to the surface of the noodles. The water attahced to the noodle together with the oil is evaporated by the remaining heat of the noodles. |
