PURPOSE:To color a drink in excellent tint free from turbidity, stably, in a wide pH range, by the use of a specific natural color. CONSTITUTION:A red color extracted from red cabbage is added to a drink such as refreshing drink, carbonated drink, concentrated drink, lactic drink, etc. The amount of the color is <=1wt% based on the drink. The extraction is carried out by (1) immersing the leaves or stalks of red cabbage in water containing <=1% of potassium sulfite or an aqueous solution containing <=1% of potassium sulfite and <=40vol% of ethyl alcohol, (2) adding sulfuric acid to the extract, (3) concentrating the mixture to remove the sulfurous acid, (4) precipitating the impurities by adding an alcohol, and (5) concentrating the filtrate to dryness. |
