PURPOSE:A starch milk is liquefied with an amylolytic enzyme to form a dextrin solution, to which additionally starch and the enzyme are added and liquefied, whereby high-concentration dextrin solution suitably used to produce high-concentration starch sugar solution is produced without any difficulty in operation. CONSTITUTION:Water is added to starch from such as tapioca, sweet potatoes or potatoes to make 35-40% starch milk, which is adjusted in pH to 6.5-7.5 with an alkali. Then, a liquefying amylase, e.g., alpha-amylase originating from a Bacillus bacterium, is added to the milk, which is liquefied at 80-95 deg.C for 30- 60min. Then, additional starch is incorporated to the liquefied mixture to form 50- 65% starch milk. Further, a liquefying amylase is added to the strach milk, which is again liquefied at 80-95 deg.C for 30-60min to produce a high-concentration dextrin solution of 50-65%. The process can be performed not only batchwise but also continuously. The initial preparation of over 50% concentration starch milk results in high viscosity to make operations of agitation and transportation difficult. |
