A refrigeration system includes an evaporator 11, a vessel 31 disposed beneath the evaporator, a conduit 33 connecting the bottom of the evaporator to a point adjacent the bottom of vessel 31, a vent conduit 34 connecting the top of vessel 31 with the vapour space of the evaporator, a valve 35 in conduit 34 and a heating coil in vessel 31, the arrangement being such that refrigerant can be drained from the evaporator to vessel 31 by opening valve 35 and returned from the vessel to the evaporator by closing valve 35 whille heating the refrigerant to cause partial vaporization and increased pressure within the vessel. Evaporator 11 is cylindrical and contains a tube 16 through which a congealable liquid is passed, the tube containing a scraper 25. The heating coil in vessel 31 comprises part of a line 36 which supplies liquid refrigerant to the evaporator via branch lines 37, 38 leading respectively to the top of the evaporator and to nozzles 44, 45 in the bottom of the evaporator. The nozzles are arranged to discharge tangentially with respect to the surface of tube 16 to cause a circulatory motion of the refrigerant surrounding the tube (Figs. 4 and 5, not shown). The refrigerant level is maintained between lower and upper limits by sensors 60, 61, the former being arranged to close a valve 39 in line 37 when the refrigerant has reached the lower level and the latter to close a valve 40 in line 38 when the refrigerant has reached the upper level. Vapour is withdrawn from the evaporator via a separator 46, which contains semi-cylindrical gauge strips (Figs. 6 and 7, not shown), and a suction line 47 containing a pressure-responsive valve 49, is compressed in a compressor 48 and condensed in condenser 54. In operation, should the congealed liquid become too viscous, as sensed by an overload device connected to the motor driving the shaft of scraper 25, valve 35 is automatically opened and a valve 41 in line 36 is closed to terminate refrigeration. A valve 52<SP>1</SP> may then be opened manually to supply hot vapour from the compressor to the evaporator. Vessel 31 is provided with a pump 64 for collecting contaminants such as oil which may be removed through a valve's conduit 65.
