The metal roasting pot comprises a lid and an insert of porous ceramic material as well as a removable inner pot (4) of metal to contain the food. The inner pot fits into the main vessel so that it is supported above the base (1b) that the ceramic insert (7) can be placed loosely between the base (4b) of the inner pot (4) and the base (1b) of the vessel (1). A space is also left between the side walls of the inner pot and the walls (1a) of the outer vessel (1). The ceramic insert is wetted before use and the steam which is slowly given off during the cooking time ensures an even cooking temperature with no overheating of the base of the inner pot. The food is thus cooked evenly without danger of sticking to the sides. Cleaning is easy since the food does not come into direct contact with the ceramic insert.
