The comminuted hide wastes, e.g. machine leather scrap are broken down hydrolytically in a first step using alkaline proteinases having an optimum action between pH 9 and 13 in the presence of urea in the pH range optimal for the enzyme used. In a second step, the hydrolysis is completed with the addition of weakly alkaline, neutral or acidic proteinases having an optimum action between pH 2 and 5 in the presence of a strong acid in the pH range optimum for the enzyme or enzyme mixture used. Fat and protein hydrolysates are then separated from one another by demixing at a temperature in the range from 80 to 100 DEG C. Products are thus obtained from the hide wastes which can be reprocessed to give high-grade protein and fat-containing substances.
