<p>An improved meat tenderizing system is provided in which a pair of oppositely positioned carriage assemblies, each carrying a number of needle manifolds, is operated to align injection needles with a carcass that is conveyed in a longitudinal path intermediate the carriage assemblies. At least some of the needles are pivotable so as to direct the injection needles into the carcass at a desirable angle.</p> |
