摘要 PURPOSE:To safely and efficiently obtain soybean curd having excellent quality by pouring coagulant into a shape box filled with soy milk, feeding into boiling trough in turn, dipping in heated fluid and taking the shape box out from the boiling trough after a fixed time. CONSTITUTION:A coagulant is poured into shape boxes 23 filled with soy milk and stirred, then the shape boxes 23 are fed to a boiling trough 21 filled with heated fluid of specific temperature from one side of the boiling trough, in turn, by a shape box-feeding device 25. Next, said shape boxes 23 are transferred to other side of the boiling trough 21 in turn, in dipped state in the heating fluid in the boiling trough 21, for a fixed time necessary for converting said soy milk to soybean curd. Furthermore, said shape boxes 23 are taken out in turn at other side of said boiling trough 21 to steeply improve productivity and safety and obtain soybean curd having excellent quality.
