1531219 Foods based on foamed gels UNILEVER Ltd 2 Dec 1975 [4 Dec 1974] 52495/74 Heading A2B A dehydrated food product comprises a finely-divided foodstuff dispersed in a foamed thermostable edible chemically-set gel based on a charged polysaccharide gelling agent. The foodstuff is preferably vegetable or fruit, and it may be cooked if desired before incorporation into the gel. The foamed gel may be stabilised by albumen or hydrolysed soy protein. The gelling agent may be an alginate or a low-methoxy pectate, and may be used in the form of a water-soluble (sodium) salt and set by addition of polyvalent metal ions e.g. calcium in the form of a sparingly soluble salt. An edible acid e.g. citric or maleic, may also be added to the mixture to be gelled. Carboxymethyl cellulose may be added to control the viscosity. Antioxidants, vitamins, sweetening, seasoning, flavouring and colouring agents may be added to the ungelled mixture. |
