Method involves a system of communicating vessels of which at least one is the pressurised enclosure. This then has an inlet and outlet passage connected to the lower part of the vessel. This is then filled with a fluid medium liquid or gaseous of greater density than the surrounding atmosphere. One side of the pressurised enclosure is formed from the surface of the fluid. This is esp. oil or water. Some form of conveying system is provided between the inlet, the enclosure and the outlet. Used esp. for continuous treatment of food materials e.g. for pressure cooking or treatment to preserve certain qualities. Continuous or quasi-continuous processes using treatments under pressure have had to rely on mechanical seals. This tends to damage the food. The system described avoids this.
