1466957 Enzyme mixtures BOEHRINGER INGELHEIM GmbH 19 April 1974 [21 April 1973] 17320/74 Heading C3H [Also in Division C6] An enzyme mixture useful in the mashing of cereal grains consists essentially of amyloglucosidase and at least one microbial and/or vegetable protease, and can (optionally) include cellulase, hemi-cellulase, pectinase, pentosanase and #-glucanase. It is, however, to be free of α-amylase. A preferred mixture contains 500-1500 units per gram of amyloglucosidase and 50-250 units per gram of proteases standardized as to activity by a starch or lactose carrier material. Of the protease activity 70% may be derived from vegetable and 30% from bacterial sources, e.g. papain and B. subtilis, respectively. Fungal and bacterial proteases may also be combined. Preferably the pH and temperature optima of the enzymes in the mixture do not differ by more than 0À6 pH and 8‹ C. (pH 5À0, temperature 58‹ C.). |
