<p>Slices of meat, cut across the muscle fibres, are tenderised by passing the slice between the two platens of an eccentric press. The meat is enclosed during the compression between two plastic foils which are welded together to form a sealed package when the slide has been pressed to a 'Schnitzel'. This replaces the mutual labour of beating the 15 mm thick slices down to the 3 to 5 mm thick 'Schnitzel'. Excessive extra costs by oversize 'Schnitzel' are saved.</p> |
