摘要 <p>PURPOSE:To obtain a correct evaluation value of the quality of boiled rice easily and in a short time by measuring the content rate of gelatinized starch by applying near-infrared rays of a specific wavelength to the boiled rice, and by evaluating the quality of the sample boiled rice on the basis of a measured value. CONSTITUTION:Near-infrared rays of a specific wavelength are applied by a near-infrared spectrochemical analyzer 3 to sample boiled rice put in a sample vessel fitting box 5, either one of a reflected light or a transmitted light thus obtained is taken out as a measuring light and the intensity thereof is detected. Next, a CPU 4c of a control device 4 computes the content rate of gelatinized starch on the basis of measured data written in a RAM 4b and a constituent conversion count value stored in a ROM 4b beforehand and calculates a correct evaluation value of the quality of the sample boiled rice. According to this constitution, anyone can obtain the correct evaluation value of the quality of the boiled rice easily and in a short time, and since the conditions in boiling the rice are also taken into consideration, evaluation of the quality matched more with the real conditions can be executed.</p>
