PURPOSE:To provide a dried edible flower capable of keeping the color tone over a long period and to provide a process for the preparation of the dried flower. CONSTITUTION:An edible flower is immersed in an aqueous solution containing >=0.02wt.% of lecithin, >=0.01wt.% of vitamin C or its sodium salt, >=0.01wt.% of phytic acid and >=0.01wt.% of vitamin E for 1hr, drained and dried by hot air at 60-90 deg.C to a water-content of <=3wt.%. A dried edible flower capable of keeping the color tone over a long period can be produced by this process. |
