<p>A filleting machine has a table with a V-shaped groove for receiving the tail and dorsal fin of the fish. A fork centres the ventral fin of the fish. A V-shaped throat guides the fish between frustro-conical rollers which feed the fish between a group of knives making four incisions in the fish, two on each side of the dorsal fin, and two opposed to them. The fish then passes between guides to a second pair of knives which cut off the tail. These knives are controlled by contacting fingers which sense the passage of the fish's body.</p> |
