<P>PROBLEM TO BE SOLVED: To provide a soft and tasty dry candied fruit having a good shape by maturing a kumquart in a short time without getting putrefaction or growing fungi. <P>SOLUTION: This method for producing the soft and tasty dry candied fruit having a good shape and eliminated from the bitterness and hot taste of the kumquat is provided by maturing the kumquat by adding bittern taken out from the sea water and an alcohol to increase the osmotic pressure of sugar for preventing the occurrence of the putrefaction and growth of the fungi. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
