A method for making kruchenyky using Zostera includes making the kruchenyky (stuffed tenderized meat rolls) by means of chopping portioned meat (by 2 pieces per portion), tenderizing thereof by beating, adding salt, laying stewed cabbage thereon and rolling; the products are tied up with a thread, floured and roasted; the roasted kruchenyky, removing the thread, are put into a roasting pan, covered with thin lard pieces, water is added and they are stewed up to the readiness. While making the kruchenyky, at the stage of preparing the stuff of fresh headed cabbag, zostera is supplemented in an amount of 2% from the mass of the ready dish. |
