PROBLEM TO BE SOLVED: To provide delicious fermented soybeans grits with an easy means by improving weak points such as a defect that the fermented soybeans cannot be washed out with water, modification of fermented soybeans component by heating, effusing of sugar component, badness of yield and therefore excellent fermentation is very difficult. SOLUTION: This fermented soybean is composed of cotyledon protected with epidermis of cotyledon from which spornioderm is removed. The fermented soybean is obtained by supporting an elastic raw material and a hard raw material while holding a small gap, rotating at least one of the raw materials, supplying dipped in water and swollen soybeans from upward of skin-removed block having relative velocities of the elastic raw material and the hard raw material to obtain cotyledon in a state of protected with epidermis of cotyledon, and steam-boiling the cotyledon, then adding a suspension of Bacillus natto, thus filling in a vessel and fermenting. |
