The present invention relates to an apparatus for making pure buckwheat noodles with a novel structure, capable of preventing the noodles from being overcooked. According to the present invention, the apparatus has a cooling chamber (43) formed inside a pressing screw (40) and extended in a front and rear direction, so the pressing screw (40) can be cooled by circulating cooling water in the cooling chamber (43). In particular, the pressing screw (40) comprises: an outer case body (44) having the cooling chamber (43) in the inside and having a screw type blade (42) on an outer circumferential surface; and an inner cylindrical body (45) penetrating the rear end part of the outer case body (44) to be extended to the inner front side of the outer case body (44). The outer case body (44) and the inner cylindrical body (45) are connected to a cooling water circulation means (50) to circulate the cooling water to the cooling chamber (43). Thus, since the pressing screw (40) is cooled at a proper temperature, it is prevented that materials are excessively heated due to the heat of the pressing screw (40), and thereby elasticity and texture disappear from completed noodles (1). |
