PROBLEM TO BE SOLVED: To provide a method for manufacturing ethyl-α-glucoside capable of manufacturing ethyl-α-glucoside in a high yield and at a low cost through a condensation reaction catalyzed by α-glucosidase. SOLUTION: An α-glucosidase is allowed to act on a mixed solution of glucose and ethyl alcohol to obtain the ethyl-α-glucoside directly through a condensation reaction. Further, as the α-glucosidase, a commercially available enzyme derived from Aspergillus niger or a thermophilic filamentous fungi, Thermoascus aurantiacus, is used. |
