DEBRANCHING ENZYME AND PROCESS FOR PRODUCING THE SAME

A debranching enzyme, a process for producing the enzyme, a microorganism capable of producing the enzyme, and a process for producing glucose liquids using the enzyme. The invention comprises a strain Bacillus sp. APC-9603; cultivation of the strain to produce a debranching enzyme with heat resistance, an optimum pH in an acidic region, and broad substrate specificity; and production of glucose and maltose by using this enzyme.
