PRODUCTION OF SHOCHU

PURPOSE: To reduce the amount of a pot ale produced from a distillation step in producing SHOCHU (a distilled spirit made from a sweet potato or glutinous rice). CONSTITUTION: A pot ale produced from a distillation step in producing SHOCHU is used as a primary unrefined SHOCHU or drawing water in producing the SHOCHU. Even when the pot ale is used, the SHOCHU can be produced without deteriorating the fermentation yield or quality of the product.
