摘要 PURPOSE: Provided are sugar free soft chewing candy and its preparation process by crystallization, thereby producing sugar free chewing candy having improved softness and chewiness. CONSTITUTION: The method comprises the steps of: mixing at least sugar alcohol selected from xylitol, maltitol, erythritol, isomalt, sorbitol and mannitol with reduction dextrin, then followed by dissolving, stirring, concentrating and cooling the mixture; putting it into a kneader then adding a gelling agent; dissolving them and adding oil and emulsion thereto; pulverizing sugar alcohol and adding it thereto; kneading the mixture for 10-30 minuets with maintaining 50-90 deg.C; and crystallizing it at 30-70 deg.C with relative humidity of 50-70% for 3-24 hours.
