PROBLEM TO BE SOLVED: To provide an underwater thawing/freezing machine utilizing compound waves suitable for freezing and thawing fresh food. SOLUTION: The underwater thawing/freezing machine utilizing compound waves is structured as follows: the thawing/freezing tank 2 of a thawing/freezing main body 1 is charged with ethyl alcohol-added water 4 as thawing/freezing treatment water 3; the ethyl alcohol-added water 4 is prepared so as to regulate water temperature to be at optimum one around -2°C when used for thawing or around -45°C when used for freezing. A wave piezoelectric vibration element 7 activated in thawing time is composed of multiple kinds of the wave piezoelectric vibration elements 7 having around 1.600 kHz, 2,600 kHz or the like.
