PROBLEM TO BE SOLVED: To provide a heated liquid whole egg that is fully sterilized, and that has a high foamability.SOLUTION: The liquid whole egg of the present invention is a heated liquid whole egg which is Salmonella-negative per sample weight of 25 g and in which the coliform bacteria are less than 10/g, and in which, when the heated liquid whole egg is subjected to electrophoresis by Native-PAGE method, 2 ovotransferrin bands including a first band, and a second band having a migration speed faster than the first band, are detected, and when the thickness of each of the 2 ovotransferrin bands is measured with a densitometer, the measured value of the first band is 50% or more and 200% or less of the measured value of the second band. Thus, a heated liquid whole egg having a high safety and also having a high foamability can be provided.SELECTED DRAWING: Figure 3 |
