Red colouring agent for foodstuffs comprises 8-acetamido-2-(azo-benzene-4'-sulphonyl)-1-naphthol-3,6-disulphon- ic acid (I) or an edible salt thereof, as colourant, in an edible diluent or vehicle. (I) (named colourant Red SA) gives a good, stable red colouration to foodstuffs, esp. sauces and also carbonated drinks, ice creams and jams. (I) has a satisfactory red tone over a large pH range, and is biologically satisfactory. |
