<P>PROBLEM TO BE SOLVED: To provide buckwheat flour for water-rich noodle that can give water-rich noodle having appearance like hand-made noodle, for example, sharp-cut noodle edges, smooth throat pass, texture-fine and dense but giving clear teeth touch, despite the noodle is machine-made, and provide a method for producing water-rich noodles by using the buckwheat flour. <P>SOLUTION: In the buckwheat flour to be used for water-rich noodles, the buckwheat flour is adjusted in particle size so that the content of fine powder with a particle size of less than 25 μm is in the range from 25 %wt. to 45 %wt., further, this flour is mixed so that the amount of the flour reaches more than 30 pts.wt. per 100 pts.wt. of the material powder, then water is added to the material powder in an amount of 40 pts.wt. to 50 pts.wt. and they are kneaded to produce water-rich noodles according to a normal process. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
